Vá então batendo (em velocidade menor) a mistura dos secos e uma xícara de leite, alternando. Misture a casca de dois limões. Vejo sempre, mas nunca testei receitas. A idéia da Torta de Santiago me interessou, pois era um jeitinho de ficar mais perto da España (quem me conhece sabe o porquê). Do livro eu já falei (&lt;a href="http://trytobake.blogspot.com/2008/09/livro-querido-amiga-querida.html"&gt;http://trytobake.blogspot.com/2008/09/livro-querido-amiga-querida.html&lt;/a&gt;) , agora da receita nunca!&lt;br /&gt;&lt;br /&gt;&lt;span style="COLOR: rgb(255,0,0); FONT-WEIGHT: bold"&gt;NEW YORK CHEESECAKE&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Derreta 6 colheres de sopa de manteiga sem sal e misture com 200gr de bolacha integral processada. Em uma forma de aro removível, pincelada com óleo, espalhe a mistura pressionando com as mãos. Quando estiver firme, reserve. Vá aquecendo o forno, a 180.&lt;br /&gt;&lt;br /&gt;No processador, coloque 450gr de cream cheese (aquele, do bom), dois ovos grandes, 100gr de açúcar e essência de baunilha (1 colher de chá - da última vez usei baunilha de verdade). Processe até que fique uma mistura homogênea. Derrame com cuidado sobre a base de bolacha e leve ao forno por 30 minutos, até que as bordas estejam assadas e o centro ainda meio molinho. Deixe esfriar por 20 minutos (mas pode deixar o forno ligado). Enquanto estava assando, você pode deixar 2 xícaras de iogurte natural escorrendo para tirar o soro. Misture esse iogurte a 50gr de açúcar e um pouco de essência ou baunilha. Quando o cheesecake tiver esfriado um pouco, coloque o iogurte por cima e volte ao forno por mais 15 minutos. Não vai estar firme, firme quando você retirar, mas a receita e feita de véspera e na geladeira ele acaba de firmar.&lt;br /&gt;&lt;br /&gt;No dia seguinte, quando for desenformar, escolha uma geléia de sua preferência e espalhe por cima do chessecake. Normalmente, sou meio chatinha pra comida (daquelas que nem provou e diz que não gosta), mas o estranho é que, quando viajo, não costumo dizer não. Foi assim na Itália, na casa das minhas amigas - onde provei e comi muita coisa que antes não comia. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Por exemplo, eu não gosto de café. Sim, eu não gosto de café. Mas não pude resistir a um Tiramisu feito especialmente pra mim (para aprender e provar). Desde a ida ao supermercado para comprar o mascarpone percebi que jamais poderia rejeitá-lo. E ainda bem que não rejeitei! &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Não voltei tomando xícaras e xícaras de café, mas me apaixonei pelo Tiramisu. E aprendi a fazer.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Foi o "bolo de aniversário" do meu irmão no almoço do Domingo. Simples, não muito doce. Um sabor peculiar, que agora me lembra tudo aquilo que vivi lá.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;TIRAMISÚ DI ANA :)&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Bata 5 claras em neve com duas colheres de sopa de açúcar. Reserve.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Bata as cinco gemas com uma colher de sopa de açúcar. Quando estiver mais claro e cremoso, junte 500gr de queijo mascarpone (tem que ser mascarpone!). Incorpore as claras até que o creme fique mais aerado.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Em uma travessa, vá arrumando os biscoitos champagne mergulhado em café (já frio). Para cada camada de biscoito, uma boa camada de creme e assim sucessivamente. Três camadas de biscoito são o mínimo aceitável (segundo Ana!). Depois da última camada de creme polvilhe cacau em pó. Geladeira (é bom fazer de véspera). E pronto. Despeje sobre a massa ainda quente e leve ao forno novamente, até que o recheio fique firme e as bordas mais douradas, uns 15 minutos. Tire do forno e espere esfriar. Quando estriver macio, adiciona o iogurte e só mistura com uma espátula. Não dá pra comer tudo o que dá vontade de fazer. Fiz e me desfiz...levei pro trabalho, mandei pro ex-trabalho...&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;DARK CHOCOLATE MUFFINS &lt;/strong&gt;&lt;br /&gt;(receita da Cinara)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Derreta (no microondas) uma barra de chocolate meio-amargo junto com meia xícara de manteiga. Reserve.&lt;br /&gt;&lt;br /&gt;Em um bowl, misture 2 xícaras de farinha, 1 xícara de açúcar, 2 colheres de chá de fermento em pó e meia colher de chá de sal. Faça um buraco no meio e adicione dois ovos, 1 colher de chá de essência de baunilha e 3/4 de xícara de buttermilk (leite talhado com vinagre branco ou suco de limão). Misture com uma colher, espátula ou fouet. Depois incorpore a mistura de chocolate.&lt;br /&gt;&lt;br /&gt;Despeje a massa em forminhas de muffin - o resultado sempre fica melhor se usar a forminha de papel - e asse em forno pré-aquecido (180 graus) por mais ou menos 20 minutos.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Esses aí estavam saindo do forno. Tentar fazer alguma coisa que você acha que é difícil e conseguir um resultado maravilhoso logo de primeira dá o maior ânimo. Foi assim com a receita de focaccia que recebi por correio em um folhetinho promocional. Já fiz algumas vezes e dia desses teve bis.&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;strong&gt;FOCACCIA BRANCA &lt;/strong&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;strong&gt;&lt;br /&gt;&lt;/strong&gt;4 xícaras de farinha de trigo&lt;br /&gt;1 envelope de fermento biológico&lt;br /&gt;4 colheres de sopa de açúcar&lt;br /&gt;1 colher de chá de sal&lt;br /&gt;3 colheres de sopa de margarina&lt;br /&gt;1 xícara e meia de chá de leite morno&lt;br /&gt;Azeite a gosto&lt;br /&gt;&lt;br /&gt;Dissolva o fermento em um pouco de leite morno. Junte todos os ingredientes secos, faça um buraco no meio e adicione o leite, o fermento dissolvido e a margarina. Incorpore todos os ingredientes e sove bastante a massa. Deixe descansar por 30 minutos e depois de trabalhar um pouco mais a massa, abra em uma assadeira com azeite de oliva. Deixe descansar mais meia hora ou até que dobre de volume. Espalhe azeite, sal grosso (a gosto) e alecrim fresco. A visita do meu irmão e da minha cunhada na sexta à noite foi a oportunidade de fazer alguma coisinha salgada para petiscar.&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;PARMESAN and HERBS MUFFINS&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;A receita deste muffin é bem simples, dispensa batedeira e é muito boa para dar uma cara nova aos petiscos.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2 xícaras de farinha de trigo&lt;/div&gt;&lt;div&gt;1 colher de sopa de açúcar&lt;/div&gt;&lt;div&gt;1 colher e 1/2 de chá de fermento&lt;/div&gt;&lt;div&gt;1/2 colher de chá de bicarbonato&lt;/div&gt;&lt;div&gt;1 colher de chá de ervas de provence (uma mistura de várias ervas como alecrim, tomilho, manjerona...)&lt;/div&gt;&lt;div&gt;1 xic de parmesão ralado (ralei mais grosso desta vez e gostei mais)&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Junte todos estes ingredientes e faça um buraco no meio. Depois incorpore:&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;1/4 de xícara de manteiga derretida&lt;/div&gt;&lt;div&gt;1 xícara e 1/4 de leite&lt;/div&gt;&lt;div&gt;1 ovo grande&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Não precisa bater, só misturar mesmo. Coloque nas forminhas de muffins untadas (é melhor não usar papel se quiser que a cor fique dourada) e leve a forno pré-aquecido a 200°, até dourar. São mais ou menos vinte minutinhos. Sirva com patês ou puro mesmo que é uma delícia.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Para acompanhar os muffins fiz o delicioso Baked Onion Dip que vi no blog de &lt;a href="http://www.cinarasplace.blogspot.com/"&gt;Cinara&lt;/a&gt;. Muito bom, foi muito elogiado e é fácil, fácil.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;BAKED ONION DIP&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 xícara de parmesão ralado&lt;/div&gt;&lt;div&gt;220g de cream cheese (amolecido - pode colocar um pouco no microondas)&lt;/div&gt;&lt;div&gt;1 xícara de maionese&lt;/div&gt;&lt;div&gt;1 xícara de cebolar picadas &lt;/div&gt;&lt;div&gt;Um pouco de pimenta&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Misture tudo e leve ao forno. Pode deixar lá até ficar bem queimadinho. A dúvida foi grande, mas no final fiquei feliz de ter escolhido Martha. =)&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Já tinha prometido há muito tempo que faria esses muffins (clássicos) assim que passasse o casamento do meu irmão. E a receita é mesmo divina. Nada melhor do que um café da manhã no estilo "freshly baked".&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;MUFFINS DE BLUEBERRIES&lt;/strong&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Na batedeira, meia xícara de manteiga sem sal amolecida e 1 1/4 de xícara de açúcar. Bata. Acrescente dois ovos, um por vez e bata mais. Misture uma colher de chá de baunilha. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Alterne os ingredientes secos (2 xícaras de farinha, 1 e 1/2 colher de chá de fermento e 1/2 colher de chá de sal) com 1/2 xícara de leite ou creme de leite. Usei o segundo. Nesta parte final, nem liguei mais a batedeira. Só misturei com a espátula. Muffin bom não pode ser muito batido.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Ao colocar nas forminha (e as minha eram lindas, lindas, lindas), jogue um pouco de açúcar e noz moscada ralada por cima). Depois é forno por mais ou menos 20 minutos. Teste do palito mesmo.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;E o cheiro dos muffins vai invadir o seu Domingo. Ou a Segunda, ou a Terça. As blueberries já estavam descongelando para o café da manhã do Domingo. Namorado trabalhando sem parar há dias. O sono não chegava. A solução?&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;COOKIES DE LIMÃO&lt;/strong&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;(juro que não era pra rimar =) )&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Prepare um açúcar aromatizado usando casacas de limão (usei o processador, cascas de dois limões e uma xic de açúcar). Reserve.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Na batedeira, 1 xícara de manteiga sem sal e 1 xic e meia de açúcar. Acrescente dois ovos, um por vez. Junte uma colherzinha de chá de baunilha e 1/2 xícara de suco de limão. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Antes disso, junte os ingredientes secos (2 ¾ xícaras de farinha, ¼ colher (chá) de sal, 2 colheres (chá) de cremor tártaro e 1 colher (chá) de bicarbonato de sódio) e vá misturando com os demais, pouco a pouco. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;A massa vai então pra geladeira por pelo menos uma hora. Mas todo mundo gostou. Foram três noites num tal de faz e coloca pra gelar, e faz mais, e coloca pra gelar mais...mas não é que vale a pena?&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Lá vai a receita (um mix das duzentas receitas que tenho desses biscoitinhos):&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;CHOCOLATE SPIRALS&lt;br /&gt;1 xícara de manteiga sem sal amolecida&lt;br /&gt;1 xícara de açúcar&lt;br /&gt;2 gemas&lt;br /&gt;1 colher de sobremesa de essência de baunilha&lt;br /&gt;1/3 de xícara de leite&lt;br /&gt;3 xícaras de farinha&lt;br /&gt;Um pouco de sal&lt;br /&gt;1 colher de sopa de fermento em pó&lt;br /&gt;100g de chocolate meio amargo derretido&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Bata a manteiga, o açúcar e as gemas até que fique uma mistura homogênea. Acrescente a baunilha em velocidade baixa e vá acrescentando aos poucos a mistura de ingredientes secos.&lt;br /&gt;Bata até que estejam incorporados. Depois, separe a massa em duas metades iguais e retire metade da batedeira. Acrescente o chocolate e bata até que esteja totalmente incorporado à massa.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Deixe a massa descansar na geladeira por no mínimo uma hora, ou de um dia para o outro. Quanto mais fria estiver, mais fácil de trabalhar. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;O que fazer com a massa depois de fria, vai depender do formato que quiser dar aos biscoitinhos. Para fazer o espiral é necessário abrir dois retângulos de massa (quanto mais finos, melhor...daí a vontade de ter tido mais tempo), e depois juntá-los (passando clara de ovo para fixar). Enrole como se fosse um rocambole. Para cortá-los, precisam estar bem geladinhos, então é bom colocar na geladeira por mais um tempo. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;O biscoitinho fica uma delícia. Simples e gostoso mesmo, pra tomar com um café ou chá. Quando vi que podia ser bolo, corri pra colocar meu nome lá. &lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;E como tinha que ser uma coisa mais simples, fui de bolo de cenoura. &lt;/span&gt;&lt;span style="font-family:trebuchet ms;"&gt;Não resisti à receita lambuzada de chocolate meio amargo do &lt;/span&gt;&lt;a href="http://www.chocolatria.blogspot.com/"&gt;&lt;span style="font-family:trebuchet ms;"&gt;blog que eu adoro &lt;/span&gt;&lt;/a&gt;&lt;span style="font-family:trebuchet ms;"&gt;e a repoduzi.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;&lt;span style="font-family:trebuchet ms;"&gt;BOLO DE CENOURA&lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;3 cenouras grandes&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;1 xícara e meia de açúcar&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;1 xícara de óleo&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;3 ovos grandes&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;Processe todos os ingredientes e junte 2 xícaras de farinha e 1 colher de sopa de fermento. Coloque a mistura em uma forma untada e asse até passar no teste do palito (mais ou menos 40 minutos). A cobertura luxuosa é feita de chocolate meio amargo (140g), margarina (1 colher de sopa), leite (1 xic) e margarina (1 c.s). Só pra ficar do jeitinho que a torta é: toda escurinha.&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Filling:&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;175g de manteiga&lt;/p&gt;&lt;p&gt;250g de açúcar mascavo&lt;/p&gt;&lt;p&gt;4 ovos levemente batidos&lt;/p&gt;&lt;p&gt;4 colheres de sopa de cacau em pó&lt;/p&gt;&lt;p&gt;150g de chocolate meio amargo derretido em banho maria&lt;/p&gt;&lt;p&gt;300ml de creme de leite&lt;/p&gt;&lt;p&gt;Bata o açúcar e a manteiga em uma batedeira e vá acrescentando aos poucos os ovos (já batidos) e o cacau. Acrescente o chocolate e o creme de leite e misture. &lt;/p&gt;&lt;p&gt;Asse em forno a 160 graus por cerca de 40 minutos.&lt;/p&gt;&lt;p&gt;Para decorar, a receita original pede chantilly e raspas de chocolate. &lt;/p&gt;&lt;p&gt;E não é que a lama é gostosa mesmo? Ele viu a receita e pediu. Enquanto isso bata os ovos e depois acrescente a farinha, o açúcar e a baunilha. Mexa até que os ingredientes se incorporem. Deixe o chocolate derretido esfriar e junte aos ovos e aos ingredientes secos. Misture tudo e coloque sobre a massa pré-assada (só 10 minutinhos no forno à 180 gruas) e fria. &lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;Leve ao forno baixo (140 graus) por mais ou menos 50 minutos. Vai formar uma casquinha leve e ficar perfeita.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div style="font-style: italic;"&gt;&lt;span style="font-family:trebuchet ms;font-size:85%;"&gt;Observações: a receita pedia "golden sugar", então usei açúcar demerara, mas só para a metade da quantidade, pois achei que o cheiro de cana poderia influenciar no resultado final. Também coloquei umas gotinhas de irish cream, para quebrar o doce.&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:trebuchet ms;"&gt;E foi aí que a paixão Dele virou paixão de todo mundo aqui em casa.
